Raw Silken Wild Cherry Protein Smoothie

 

silken tofu, banana, cherry, raw cacao, vanilla powder, stevia, soy milkI used Organic Non-GMO  Silken Tofu, and  Organic Non-GMO soy milk  for my protein source.

For this Smoothie you will need:

Base: Soy Milk, Silken Tofu, (Organic & Non-GMO )

Fruit: Frozen Cherries and banana

Boost:  Organic raw cacao powder

Spice: Vanilla Powder

Topping: Unsweetened Coconut

Everything was blended together.

INGREDIENTS
  • 91 grams Silken Tofu
  • 1 cup soy milk (add more if needed)
  • 75 grams frozen cherries
  • 1 tbsp Raw Cacao powder
  • 1/4 tsp Vanilla Powder
  • 10-20 drops Stevia
  • 1 frozen banana
INSTRUCTIONS
  1. Blend all ingredients
  2. Top with coconut.

Coconut Vanilla Bean and Cherry Nice Cream & Vanilla Bean and Wild Blueberry Nice Cream

Frozen bananas make some of the best soft-serve ice cream. I usually use 2- 3 cups of frozen bananas for the base. I add vanilla, cinnamon or any other spice blend. I then add coffee, green tea, matcha, fruit, or mixed berries and blend until smooth. A splash, or two of almond, or coconut milk helps to break the frozen bananas down to a creamier texture.

Vanilla Bean & Wild Blueberry Nice Cream

I add a vanilla layer to the glass, then add the blueberries to the remaining banana nice cream and blend before topping the vanilla blend.

For this Vanilla Bean & Wild Blueberry Nice Cream you will need:

  • 2 -3 Cups frozen bananas
  • 1 cup wild blueberries
  • Ceylon cinnamon
  • Vanilla bean paste
  • *Blend until creamy

Vanilla Bean & Wild Blueberry Nice Cream

For this Coconut Vanilla Bean & Cherry Nice Cream you will need:

  • 2-3 Cups frozen bananas
  • 1 Cup cherries
  • 1/4 cup coconut cream
  • vanilla bean paste
  • Ceylon cinnamon
  • Raw Cacao Nibs (topping)
  • Coconut Flakes (topping)
  • *Blend  until smooth

Probably one of the simplest treats you could ever create, and it really needs no recipe. Bananas, fruit, spice blend, and eat.

(N)Ice Cream… The Best Part of Summer

The best thing about summer for me consist of ice cream, walks through the park, and lazy Sundays by the Hudson in my quiet place watching the boats go by.  Because I watch my intake of added sugar, I really don’t indulge in ice cream anymore. I have learned to eat naturally occurring sugars found in fruit in moderation. I find If I don’t deprive myself, I eat less of it. My favorite sweet treats are Smoothie Bowls, Nice Cream, and Energy, or Protein Balls.

  • 2 Cups frozen bananas
  • 1/2 tsp Instant Coffee (I use Nescafe)
  • 1/2 tsp Raw Cacao Powder
  • Raw Cacao Nibs (topping)
  • Almond slices (topping)
  • Coconut Flakes (topping)
  • Chia, Flax, hemp Seeds (topping)
  • *Blend Banana, coffee, cacao powder, vanilla until smooth. Top with almonds, coconut, cacao nibs, chia, flax, and hemp seeds.

For this Blueberry Banana Nice Cream/Smoothie Bowl you will need:

  • 2 bananas
  • 1 cup organic blueberries
  • 1/2 tsp Ceylon Cinnamon
  • Blueberries  (topping)
  • Almond slices (topping)
  • Chia, Flax, hemp Seeds (topping)

*Blend Banana, 3/4 cup blueberries, vanilla, cinnamon until smooth. Top with almonds, 1/4 cup blueberries ,chia, flax, and hemp seeds.

  • 2 cups Frozen bananas
  • 2 tbsp Starbucks natural Fusion Caramel Coffee (brewed and frozen) =6oz
  • 1/2 tsp vanilla extract
  • Raw Cacao Powder (topping Sprinkle)
  • Raw Cacao Nibs (topping)
  • Almond slices (topping)
  • Coconut Flakes (topping)
  • Chia, Flax, hemp Seeds (topping)

Mushroom & Spinach Scramble, Goat Cheese Blackberry Toast, and Breakfast Smoothie Bowl.

I wanted a Breakfast Smoothie Bowl, and He opted for the Mushroom & Spinach Scramble, and Goat Cheese Blackberry Toast. I find when I get my fruit, and vegetables in early in the day, I am able to get them in my diet.

I love the flexibility of eating mostly plant-based with occasional inclusion of other sources of protein. I had no idea the term “Flexitarian” was even a thing, I just knew it was how I ate. I do want to work towards being Vegan and look forward to the journey.

I like to saute the Mushrooms, onion, garlic, salt, pepper and spinach. I scramble the eggs a little before adding the mushroom mixture. The asparagus is cooked in a little oil, and seasoning, when just about done I add the tomatoes to the pan and toss until they are coated and heated through.

Breakfast Smoothie Bowl: 

  • Berry Antioxidant blend (strawberry, blueberry, cherry, raspberry, pomegranate)
  • 1 Frozen banana
  • handful spinach
  • 14 cup Almond milk
  • 1/4 cup yogurt (coconut, soy, or greek)
  • Sprinkle vanilla powder
  • Sprinkle Ceylon cinnamon

Blend

Top with granola, sliced strawberry, banana

Silken Raw Cacao Smoothie Bowl

Full of energy – boosting superfoods. The blend of healthy carbs and protein will keep you fuller longer, and full of energy.

Why these ingredients?

Cacao Powder, Cacao Nibs are raw, unsweetened chocolate in its natural state. It has not been heated and retains an enormous amount of antioxidants.  It offers copper, magnesium, zinc, and manganese. Cocoa powder, and 100% unsweetened dark chocolate can be used as well. (not exactly the same benefits, but cost less)

Bee Pollen is sweet and is a complete protein. It offers vitamins A, C, Iron and other vitamins, and minerals. (I have never had any adverse reaction, and I have used it, since the early 90’s) It is a known allergen, though.

Ceylon Cinnamon is known as “True cinnamon” and has medicinal and antioxidant qualities, unlike its counterpart “cassia” cinnamon, which is more commonly sold on supermarket shelves. Ceylon cinnamon from Sri Lanka is lighter in color, sweeter, lightly fragrant, and in stick form softer in texture (flaky) It also contains less coumarin. Cassia Cinnamon from Saigon, China or elsewhere is darker in color, pungent, bland and in stick form extremely hard. Once you have real, true cinnamon you will immediately know the difference.

Wild Blueberries are much smaller than regular blueberries, but have a bolder blueberry flavor, and are said to have twice the antioxidants of regular size blueberries.

Not sure if it was that my bananas were rock hard solid, the tofu, or the blender, but the consistency of this smoothie bowl was really good.  It was like eating chocolate banana ice cream for breakfast, but healthier.

Market Haul: Protein

 

 

At least 2-3 times per week I eat organic soy protein in the form of milk, tofu, and tempeh. I also picked up some radish for salad, and scotch bonnet peppers for curry. The tomatoes weren’t on my list, but I wanted to try the Kumato or brown tomato and didn’t realize until I returned home that I had already bought Campari tomatoes from a different market.

Market Haul: Protein, radish, kumato, campari tomato, nasoya organic extra firm tofu, Nasoya silken organic tofu, organic temper, eggplant

I wasn’t sure what a Kumato was, but it’s a brown tomato. As they ripen, they darken, and inside is a brown flesh.  It is not GMO product, and the brand Sunset stands by that. I will try it with my vegetables, maybe a pizza, or on avocado toast.

I also picked up organic Tempeh (temp-pay), which is an Indonesian soy product. Soybeans are fermented and formed into a white cake like form. It is high in protein offering 16 grams per 3 ounces. It has 10 carbs but offers 7 grams of fiber, which is very good. It is also a good source of calcium, and iron. Most health professionals agree eating fermented organic, non-GMO soy, like tamari, miso, natto, tempeh, and pickled tofu is actually a healthier alternative, to other forms of soy. I still eat it in moderation.

There are several types of tempeh made with barley, flax, oats, brown rice and other grains. It can be steamed, stewed, sautéed, grated, or baked. I will use it to make a Teriyaki Tempeh dish.
