I wanted a Breakfast Smoothie Bowl, and He opted for the Mushroom & Spinach Scramble, and Goat Cheese Blackberry Toast. I find when I get my fruit, and vegetables in early in the day, I am able to get them in my diet.
I love the flexibility of eating mostly plant-based with occasional inclusion of other sources of protein. I had no idea the term “Flexitarian” was even a thing, I just knew it was how I ate. I do want to work towards being Vegan and look forward to the journey.
I like to saute the Mushrooms, onion, garlic, salt, pepper and spinach. I scramble the eggs a little before adding the mushroom mixture. The asparagus is cooked in a little oil, and seasoning, when just about done I add the tomatoes to the pan and toss until they are coated and heated through.
Breakfast Smoothie Bowl:
- Berry Antioxidant blend (strawberry, blueberry, cherry, raspberry, pomegranate)
- 1 Frozen banana
- handful spinach
- 14 cup Almond milk
- 1/4 cup yogurt (coconut, soy, or greek)
- Sprinkle vanilla powder
- Sprinkle Ceylon cinnamon
Top with granola, sliced strawberry, banana
Blackberry Goat Cheese Toast
- Crusty Sourdough bread toasted
- Organic Blackberries
- Goat cheese
- Zest of Meyer lemon
- Fresh Mint
- Drizzle with warm raw honey
