Kale-Berry Smoothie Bowl

As always I have a smoothie, or smoothie bowl every morning, usually within 30 minutes of waking. I also eat small breakfast sometime afterwards. I then eat lunch and a small dinner. Some days snacks are factored in, most days they are not. As long I eat small portions, and eat often, It works for me.Avocado, Egg, Toast, and Green smoothie Bowl, granola, coconut, banana, stawberry, sundried tomatoAlthough I am consuming a more 80% alkaline plant-based diet, I do consume organic free-range eggs twice a week. Greek yogurt and Whey Protein Isolate also make up my other 20%.  I have not switched to a plant- based protein powder as of yet, because I haven’t found one I like. This particular day was my egg day. For my Kale-Berry Smoothie Bowl, I topped it with the remainder of the Gluten-Free Cranberry Nut Granola. (recipe)

Avocado Egg Toast, sundried tomatoe, lemon pepper

I had a slice of Gluten-Free whole grain toast (Trader Joe’s brand)  I scrambled an egg, and egg white seasoned it with a garlic herb blend. I topped it with a layer of avocado and sun-dried tomatoes.

As usual, his portion is quite a bit more. For his smoothie bowl, he added the remainder of the Cardamom Fig Nut Granola. (Recipe) And he had 2 whole eggs, with 1/2 avocado on a slice of sourdough crusty toast.

INGREDIENTS
  • 2 cup kale
  • 2 Mix fruit blend (strawberry, raspberry, pomegranate, blueberry, cherry)
  • ½ cup organic almond milk
  • 4 ounce banana
  • 1 t’s flax meal
  • 1 scoop vanilla protein powder
  • 1 tbsp Cranberry Nut Gluten-Free Granola
  • Optional coconut, fresh strawberry, and banana
INSTRUCTIONS
  1. Blend all ingredients
  2. Top with choice of toppings
