Smoothie Bowl: Papaya Mangosteen Sunrise

Papaya, Coconut & Mangosteen Smoothie Bowl

The Papaya or Pawpaw is probably one of the fruit I eat the least, but when I do it’s one of my many rare food pleasures. The sweet soft, tender flesh is high in vitamin C, and A as well as a good source of potassium, B vitamins, amino acids and enzymes which aid in digestion. I topped this Papaya smoothie bowl with a Cardamom Fig gluten-Free granola and Young Thai coconut shreds.

I love being able to find young Thai coconuts. I use the coconut water in my smoothies and shred the meat after freezing it.

Since it’s hard for me to find the actual mangosteen fruit, I jumped at the opportunity to try it in powder form.  Mangosteen is antioxidant rich, and growing popular superfood.

I always thought I was someone who welcomed change, but clearly I may not be her, because I purchased a new blender two months ago, and still continue to use the old one.

Meanwhile, the new blender sits unopened in the corner of the kitchen. I questioned why I even bought it, such goes life. I will finally take it out the box soon, though.

I added vanilla bean paste, simply because everything taste better with vanilla.

Instructions

  1. Blend coconut water, banana, papaya until smooth. Add protein, and mangosteen powder.
  2. Pour into two bowls. Split granola, and grated coconut and top each bowl.
